On hot days you crave bright citrus and colorful cold dishes. This ceviche is delicious and refreshing, and it makes for a perfect summer party dish.
1 pound shrimp, heads and tails removed, deveined
1 whole jalapeño seeded and sliced into very thin circles
1 small red pepper seeded and diced
1 whole bunch cilantro chopped finely
1/4 red onion sliced very thinly
1/4 cup parsley finely chopped
3 tomatoes seeded and finely diced (I used baby heirloom tomatoes here)
1/2 cucumber finely chopped
1 and half tsp salt
1/2 tsp black pepper
A drop of agave
Additional options you can add per liking : chopped mango, chopped jicama, or chopped green apples
Cut the shrimp into little cubes. Soak in 1 cup of lime juice and let stand for 20 minutes. This allows the shrimp to cook in the juice.
Mix the cilantro, parsley, green peppers, cucumber, jalapeño and red onion with the agave. Add the shrimp to the mixture with the lime juice included. Mix well , then add the salt and pepper and enjoy it with tortilla chips!
