Here’s one of my favourite salads terrific on pretty much any day. Heirloom tomatoes have a unique sweetness about them which makes them a perfect way to add a flavorful twist to a salad. I made this salad one day when I was in a hurry and all I had time to do was cut up tomatoes and mix them up with a dressing I made the night before and top them with feta crumbles, only to find it was one of the best salads I’ve had. If you haven’t had heirloom tomatoes before then you’re in for a real treat here !
1 1/2 lb Heirloom Tomatoes halved or quartered depending on their size or cherry gooseberry yellow tomatoes (as pictured)
¼ red onion diced finely
2 tsp zaatar
1 small Fennel bulb trimmed and diced
½ green apple peeled and diced
2 tbsp. peperoncini juice (from your favorite peperoncini jar)
1 tsp salt
1 tsp black pepper
½ tbsp red pepper flakes
1 tbsp red wine vinegar
¼ cup of olive oil
¼ cup of feta cheese
½ cup fresh parsley chopped finely
1tsp fried oregano
1 drop of pure honey
1tsp garlic powder
2 dill strands chopped finely
Optional additions: You can make this salad with arugula , mixed greens, raw spinach or kale. Or you can leave the tomatoes to be the star of the dish! Another great substitution according to your liking would be to substitute the feta for goat cheese, or adding grilled chicken for a more filling meal.
I like to always mix the dressing on the side before I toss it with the ingredients, that way I can make sure it tastes perfect before it mixes with the main ingredients. Sometimes I’ll even make extra and keep it for the next day for when I’m on-the-go.
In this case, mix the olive oil, red wine vinegar, peperoncini juice with your herbs and spices (parsley, dill, oregano, garlic powder, honey, salt and pepper).
Taste your dressing, sometimes you might find you might need to add salt or a certain spice you prefer to make it saltier or spicier to your liking.
Add your dressing to the chopped onions, halved tomatoes, diced apple and diced fennel bulb. Top with zaatar and enjoy! This salad is going to make you miss summer !
