The theme has been pretty steady, it’s the holidays and everything I’m making in my kitchen, shows it. I had butternut squash for the first time about a year ago and it tastes just like what the name claims it tastes like! It’s buttery, nutty, hearty, and oh so so delicious. This soup is phenomenal. If you’ve never tried butternut squash before, I beg you not to be scared and not to hesistate. If I was going to try something for the first time I would most definitely try it in a yummy buttery soup. Here’s the recipe:
2 Butternut squash , peeled, seeded and cut into 1/2 inch cubes
1/2 stick of butter
Salt & Pepper
2 clovs of garlic, minced
1/2 tsp of dried parsley
1/2 tsp cinnamon
1 cup of heavy cream
Pinch of nutmeg
In a deep sauce pan. Saute the onions until translucent then throw in the butternut squash cubes with the butter. Add all the seasonings and the heavy cream and continue to saute until the cubes can be pierced with a fork. Put the entire contents of your sauce pain in your Vitamix and blend until silky smooth. Careful not to over blend.
Easy Pz! Serve hot, with toasted walnuts and another pinch of nutmeg and dried parsley for garnish. If you have children you can even make grilled cheese sandwiches to dip into the soup!
